AmyLeo’s Luscious Breakfast Scramble

Makes 4-6 hearty servings

Sometimes you just have to create your own rendition of something in order to get what you want. Such is the case with a breakfast (or tofu) scramble. I have tried many that are poorly flavored and more chunk than scramble. A perfect blend of spices, crumbled tofu, onion, garlic and other vegetables has this Breakfast Scramble singing “Hallelujah It’s Arrived” in your mouth.

  • 1 lb firm sprouted tofu
  • 1-2 T Braggs Amino Acids*
  • 1-2 T Frank’s RedHot Original Cayenne Pepper Sauce *
  • 2-3 T ketchup
  • 1 t cumin
  • 1 t curry
  • 1 t turmeric
  • ½ t coriander
  • 2 large cloves garlic, diced
  • 1 medium white onion, chopped
  • 2 c your choice of vegetables: tomatoes, broccoli, kale, radish, carrots…go wild
  • 2-3 T refined coconut oil

Crumble tofu into small pieces; really squish it between your fingers.

Add remaining ingredients, except onion, garlic and other vegetables, mix thoroughly. Let this set while preparing other ingredients. The longer it sets the more the flavors will mature.

Sauté garlic and onion until they just start to become clear. Add tofu mixture and cook over medium heat for ten minutes, turning frequently. Reduce heat, add remaining vegetables and cook another 10 minutes. If you are using harder vegetables, such as carrots, sauté them with the onions and garlic.

For a richer tofu scramble use the larger portion for Braggs Amino Acids and ketchup. I recommend making a less rich scramble if serving with other rich foods.
